Clean Eating Chicken Lemon Supreme In The Crockpot

Crockpot dinners are sometimes the easiest way to make a healthy dinner for your family when your nights are super busy. Today I will share an amazing recipe that I found on MommySavers website and tweaked it a bit to how I made it for my family. It is an easy clean recipe called: Lemon Chicken Supreme. I made this for my family and served over asparagus, but this week will be serving it with steamed broccoli. I will make sure the broccoli is washed and cut that morning or night prior. You can steam it prior to serving dinner or if you are really short on time steam it the night before. That way it is ready to go, when you serve your meal.
Here are the ingredients you will need to make this dish: 1 (3 lb) fryer chicken,whole or pieces 1 tsp oregano 1/2 tsp rosemary (I use fresh) 3 garlic cloves, minced 2 Tbs butter (I use unsalted) 1/4 c chicken broth 1/4 c lemon juice ( I use fresh squeezed lemon juice and slice lemons as well) I use sea or himalayan salt and pepper Wash chicken, pat dry,season w/salt and pepper; sprinkle half of oregano, rosemary and garlic inside cavity of chicken,melt butter in frying pan and brown chicken-transfer to crock pot- sprinkle w/rest of oregano, rosemary and garlic; add sherry to frying pan and stir to loosen brown bits- pour into slow cooker. Cover, cook on LOW 7 hours,add lemon juice and cook 1 more hour,transfer chicken to cutting board; skim fat from juices and serve over chicken. This can easily be 21 Day Fix Approved! Enjoy this meal!
