Simple Clean Butternut Squash Recipe

This butternut squash recipe melted in my mouth. So simple, delicious and actually tasted really good warmed up the next day or even served cold with all the flavor it has. This side dish is a great compliment to many dinners but also served with breakfast.

Ingredients:

  • Butternut Squash (you can purchased cubed or cut up 1 whole butternut squash into small cubes)

  • 2 garlic cloves

  • 1 sweet onion

  • 1 tablespoon of pure virgin olive oil

  • 1 tsp of sea salt

  • 1 tsp of cinnamon

  • 1 tsp of nutmeg

  • 1 tsp of cloves

  • 1 tsp of cardamon

  • 1 tsp of lemon peel

  • 1 tsp of ginger

I purchased the butternut squashed already cubed, but then sliced most of them in half so they would cook faster. I then diced up the garlic in my hand chopper. I took the sweet onion and cut that into small pieces. After everything was cut up and ready to go I heated up a skillet then drizzled the olive oil on the skillet. I then added the butternut squash, garlic and onions to the heated skillet followed by all the spices. I made sure to sprinkle the spices trying to cover everything, then moving everything on the pan every 3-4 minutes. The dish does take a good twenty to twenty five minutes to cook, so if you do not have the time prior to serving dinner you will want to cook this up the night prior or while you are prepping your food. I use a fork to make sure the squash is cooked all the way through & brown it before serving.

I served this as a side dish with baked chicken and asparagus. Then the next morning we served it with eggs, kale & bacon. Everyone in the family approved of this recipe with both meals. I hope you enjoy it as much as we did!
