Do you ever want to host friends over for dinner but have no idea what to serve everyone? If I was hosting a dinner for 8 friends this is what I would make. This sirloin over lettuce free salad recipe.  It’s filling but not that kind of feeling that leaves you feeling you wished you made healthier choices but the kind that leaves you feeling satisfied while allowing you to keep feeling your best.  How could I not want to serve my friends something that tastes good but also allows them to feel good?  


Ingredients for sirloin:

  • 4 large strip steaks (around 12 ounces each)

  • 2-6 tablespoons of garlic butter or butter (if you need it dairy free skip this part or only add to sirloins that can have dairy)

  • Redmond salt

  • Organic ground pepper


Ingredients for lettuce free salad:

  • 5 organic ears of corn or 2 cups of organic corn

  • 1 large organic red onion

  • 2 large organic cucumbers

  • 3 large avocados

  • ¾ cup chopped organic cilantro

  • ¾ cup chopped green onion

Steps to make this meal:

  • First remove strip steaks from fridge and place on your counter to get room temperature (leave them out at least one hour)

  • Boil water and cook the ears of corn

  • Heat up a cast iron skillet on high heat for 3-5 minutes on high

  • While that heats up, season your steak on both sides with a good amount of salt and pepper

  • Add some oil to your skillet, then place the sirloins in the pan, one side for two minutes, then flip to the other side for two minutes, then turn the temperature down close to low, then place 2 tablespoons of garlic butter or butter to pan (make sure the melted butter is under the sirloins) let them cook 8 minutes (rare to medium rare cook longer the thicker the sirloins are). Once they are fully cooked let them sit on a cutting board, you can place additional butter on each one that is up to you, let them sit for 10 minutes prior to slicing thinly. 


While the sirloins are cooking this is when you slice and chop everything up. Place everything in a large bowl, pour dressing on top, toss well and then add the sirloin or you can add the sirloin if you want that to have extra flavor from the dressing. You can make your own salad dressing, I used a citrus honey vinaigrette by Drench. I found this one at Earthfare. This dressing has no seed oils and all clean ingredients.

This is the first fall in twenty years I do not have a child in sports. It is a new season of life for me and I have been thinking about how I would love to spend more time with friends. I want to catch up with old friends, get to know some new friends and gather around my table. I thought this would be a great meal to serve them at our home. It's not always easy finding something to make that most people would enjoy and makes enough to serve a good amount of people without taking hours to make. I hope that if you make this for your friends or family everyone enjoys it.
