Oatmeal Salted Caramel & Chocolate Chip Cookie Recipe

Ingredients:
1 stick of grass fed butter (room temp)
1/2 cup organic coconut oil (melted)
1 cup of coconut sugar
1/3 cup of date sugar
2 large pasture raised eggs + 1 egg yolk
2 1/2 cups of sprouted rolled oats by One Degree
2 cups of freshly milled soft white wheat flour by Milled (made here in Charleston) https://www.eatmilled.com/
2 tsp baking soda
1 teaspoon Redmond salt ( you can use the discount code: freshfitkate on their salt or any of their items like my favorite electrolytes) Redmond Life | Real Salt & Clay | Re-Lyte Electrolyte Hydration Powder
1 cup of Pascha Chocolate Chips
1 cup of Pascha Salted Caramel chips
Maldon Salt (use after they are baked)
Lets make them:
Set the oven to 350 degrees. I used parchment paper on my cookie sheets.
I then mix all the ingredients together minus both chips. Once everything is mixed well then stir both chips. Now it's time to scoop the dough onto the pans. I do press down each scoop with the palm of my hand making it flat and round. 9 minutes is all they needed to bake perfectly in my oven. As soon as you pull out of the oven sprinkle the Maldon salt on top of each cookie. Transferring them over to a cookie rack is best.
One of my favorite things over the last 12 years has been learning how to take the foods my family already loves and find ways to make them with better ingredients. Because the goal in our home has never been perfection. It's never been about eliminating every treat or saying no to cookies. Instead, it's about making small, intentional choices that help us nourish our bodies while still enjoying the foods we love. These oatmeal chocolate caramel chip cookies are the perfect example.
They are soft, chewy, packed with chocolate and caramel flavor, and have quickly become a family favorite. My kids and husband absolutely love them, which is always the true test in our house.
Why I Chose These Ingredient Swaps?
Date Sugar Instead of Refined Cane Sugar:
Date sugar is simply made from ground dried dates. Because it is less processed than refined sugar, it retains some of the naturally occurring fiber and nutrients found in the fruit.
Coconut Sugar Instead of Brown Sugar:
I also chose coconut sugar in place of brown sugar. Coconut sugar is less refined and contains small amounts of minerals such as potassium, iron, and zinc.
Fresh Milled Flour Instead of Conventional Flour:
This may be my favorite swap of all.
Fresh milled flour contains the entire grain—the bran, germ, and endosperm—which means more naturally occurring fiber, vitamins, minerals, and healthy fats remain intact.
Freshly milled flour also contains both soluble and insoluble fiber that help support a healthy gut microbiome. Another benefit is that it contains no preservatives or bleaching agents often found in conventional flour products.
Better Chocolate Chips:
I used Pascha chocolate and salted caramel chips because they are some of the cleanest ingredient options I have found and still provide that delicious, indulgent cookie flavor my family loves.
Organic Oats that are glyphosate free:

Do these swaps make cookies a health food? No.
But they do make them a more nourishing option for my family, and I truly believe that these small choices add up over time. One of the biggest lessons I have learned is that healthy living does not have to feel restrictive. Sometimes it simply means learning how to make the foods we already love with ingredients that better support our health. And if my family can enjoy a warm oatmeal chocolate caramel chip cookie while also getting more fiber and better ingredients, that feels like a win to me!!!
