Caramel Peanut Butter Crunch Date Recipe

As I lost 60lbs on my wellness journey and have sustained this healthier lifestyle for over 12 years the one thing I wanted to learn how to do was not to feel hungry or deprived like I had in the past whenever I tried to lose weight. I wanted to enjoy and savor food while learning how to properly nourish my body without sabotaging how incredible it was feeling from within. So I learned how to make the things I enjoyed with healthier ingredients like these decadent stuffed dates that remind me of a snickers candy bar only way better tasting and for you.These are so delicious. Last time I checked a Snickers wasn't refined sugar free, rich in antioxidants, provided a good source of minerals that help strengthen your bones, are heart healthy, give a natural boost of energy or help support a healthy gut microbiome like these decadent caramelly peanut butter chocolate dates do. I love being able to enjoy foods that are nourishing and keep me feeling good!
Ingredients:
9-10 organic dates (remove pit, the softer the more of the caramelly taste you will get)
Grass fed butter
2 tablespoons of peanut butter powder (just peanuts grounded)
2 Tablespoons of organic peanut butter (just peanuts and salt)
1 Pascha dark chocolate bar
Organic Peanuts
Maldon Sea Salt
Lets make them:
First remove the pits from the dates. Then place less than 1 tsp of grass fed butter on each date. Now it’s time to mix the powder peanut butter and peanut butter together. It will be thick. Put a little bit of that mixture into each date. Then add 4-5 peanuts on top followed by the melted chocolate. Sprinkle some salt on top and place in the freezer for 7-8 minutes and then enjoy. I keep them in the freezer in a glass container. Think Snickers bars, only way healthier. It's a great treat to savor after dinner.
