Cauliflower Rice Shrimp Stir Fry 21 Day Fix Approved
So this cauliflower rice shrimp stir fry is simple & delicious. It was approved by everyone in the family. To save time I did purchase the cauliflower rice from Trader Joe's along with the Healthy 8 chopped veggie mix. I typically chop my own veggies when prepping food for the week, but I was grocery shopping late at night on prep day & these two time saving products ended up in my cart. This dinner took less then 20 minutes to make.
The ingredients you will need in order to make this dinner (served a family of 5 with an extra dish left over perfect for lunch or dinner one night you family wants pizza):
1 bag of organic or wild caught shrimp
1 whole cauliflower head to make your own cauliflower rice or 1 bag of cauliflower rice
1 can of shoe peg corn (optional)
Healthy 8 chopped veggie mix
2 brown organic eggs
fresh garlic minced ( use as much or as little to your liking)
1 sweet onion chopped
Garlic infused coconut oil
On a skillet warm with medium heat & drizzle 1 tsp of garlic infused coconut oil. Add veggies, garlic & onions to sauté for 3-4minutes, then add cauliflower rice & cook together for additional 3-4 minutes.
Create a hole in the middle of the vegetables & scramble to brown eggs in the center. Once they are cooked mix them with the veggies.
Then add Liquid amino seasoning in place of soy sauce. The soy sauce alternative is much healthier for you. Remove the hot veggies, then drizzle the skillet with another tsp of garlic coconut infused oil place the shrimp on the hot skillet & cook on each side for 3 minutes.
Place the veggies on your plate & add the shrimp on top. You may drizzle a teaspoon of liquid aminos for some extra added flavor.
If you are following the 21 day fix. You can portion out the veggies and shrimp separately. I counted this as two greens & 1 red. If you add a lot of corn you will need to account for that as well.
