One thing I’ve learned on my wellness journey, as I lost 60 pounds and have maintained this lifestyle for over 11 years, is that the ingredients I consume truly matter. If I want to feel my best from within, I need to be mindful of what I eat. I wanted to learn how to enjoy the foods I love in a healthier way. That’s why I’m so excited for your taste buds to fall in love with my healthier version of a s’more! These bars are a 10/10! They’re one of my best recipes, taste indulgent, and use only 8 ingredients. Plus, they have much less sugar, are gluten-free, and don’t include TBHQ, corn syrup, seed oils, artificial flavors, or colors. After savoring one, I can still feel my best!

Ingredients
The Base:
1 ½ cups Simple Mills Honey Cinnamon Crackers, ground
3 tablespoons melted and cooled organic coconut oil
2 tablespoons organic pure maple syrup
1 teaspoon organic vanilla extract
1/2 teaspoon Pink Himalayan Sea Salt
First Layer:
⅔ cup drippy organic natural peanut butter (no added sugars or oils)
1/3 cup pure organic maple syrup
1/4 cup organic coconut oil
1 teaspoon organic vanilla extract
1/4 teaspoon Pink Himalayan sea salt
Second Layer:
Organic Vanilla Marshmallow Creme
Top Layer:
1 cup of Just Date Chocolate Chips
1 tablespoon coconut oil
Let’s Begin!
First, turn the oven on to 350°F. As it heats, make your base by mixing crushed crackers with coconut oil, maple syrup, vanilla, and salt. Press this mixture firmly into an 8×8 inch square pan lined with parchment paper and bake for 10 minutes. To crush the crackers, I used a hand blender. You can use that or a food processor.
Once your base is done baking and cooled (you can stick it in your freezer to speed up the process), you can begin to make your middle layer. Mix peanut butter, maple syrup, coconut oil, vanilla, and salt in a pot over medium-low heat for 2 minutes.
Pour your mixture on top of the cooled base and then place it in the freezer to solidify for 30 minutes.
Now it’s time to mix the marshmallow creme in the container. Once it's mixed, spread it over the top. Place it back in your freezer for another 30 minutes.
Once the 30 minutes are up, it’s time to make the top layer. Melt your chocolate with coconut oil over medium heat on your stove. Pour the chocolate on top and then tilt the pan in all directions to ensure it’s evenly covered. Place it back in the fridge or freezer for 20 minutes or until the chocolate has hardened.
Finally, it’s time to cut into bars! Run the knife under hot water for a cleaner cut, and get ready to enjoy these delightful s’mores.
