6 Ingredient GF Sweet Crisp Bar Recipe

Loosing 60 lbs and maintaining my weight loss all of these years doesn’t mean I live a lifestyle that feels deprived even as a sweet tooth lover. What it did mean was I needed to learn how to properly fuel my body as a I created a healthier lifestyle and how to make the things I enjoyed eating in a healthier way. These no bake Sweet Crisp Bars are Gluten Free, Refined Sugar free, no bake and only 6 Ingredients!
Let’s grab the the ingredients:
20 organic dates (large & pitted)
8 Tablespoons of organic coconut cream (no gums)
1 tablespoon of organic vanilla
1/2 cup of melted grass fed butter
4 cups of organic rice crisp gluten free cereal from Whole Foods
Sprinkle of Maldon salt
Lets make them:
Boil 3 cups of water. While the water is getting to a boil remove the pits from the dates. Pour the boiling water over the dates and let them soak for ten minutes then drain the water. Place the dates, melted butter, vanilla and coconut cream (scoop the thick cream we want as much as that as we can get) in the blender. Blend everything until smooth. Add the cereal and the blend together in a bowl then mix well. Pour into a parchment lined glass pan and smooth the mixture. Sprinkle salt on top. Put the pan in the freezer for one hour to let it set, then cut, serve and enjoy.
