Pad Thai Date Night At Home


Make sure you save this if you’re looking for a date night idea or love Pad Thai!


Cooking together can be such a fun date! Yes going out is fun but sometimes after a long week sometimes you just want to be home.


So turn some good music on in your kitchen, connect about your week, tell your spouse some things you love about them and flirt as you learn to make this healthy delicious Pad Thai dish together!

Ingredients:


2 large slices of Organic Chicken breast

2 Brown organic eggs

1 TBS Minced Garlic

1 TBS Fish Oil

1/4 Cup Rice vinegar

2 TBS Coconut Aminos

2 TBS Raw Honey

1 TBS organic peanut butter

1 TBS Avocado Oil

1 box Flat Brown Rice Noodles (8oz) or 1 large spaghetti squash

1 chopped Sweet onion

1/2 cup Green chopped onions

2 Cups of shredded Carrots

1 package of bean sprouts

1/4 Cup crushed Peanuts

Garnish with Lime


How to prepare:

If you are using spaghetti squash in place of rice noodles this will be the first thing you want to bake or microwave.


Clean, pound and cut up chicken into small strips, drizzle pan with avocado oil and begin to brown chicken on both sides. In a separate pot, boil water and begin preparing rice noodles if you don’t want to have spaghetti squash. Or double up the ingredients to make both like we did.


When chicken is almost done, make a hole in the center of the pan, and add 1 TSP Sesame Oil, and garlic then scramble the two eggs before adding those to the pan.


In a separate bowl, combine liquid ingredients, honey, rice vinegar, coconut aminos, peanut butter, fish oil then whisk together.


Remove egg and chicken from skillet and add chopped veggies and stir on medium heat until tender. When done toss in noddles and stir together then pour the sauce over the noodles.


Mix together for less than a minute and transfer to your dishes. Add chicken with the eggs to the dishes.


Garnish with peanuts, fresh chopped cilantro and lime wedges.
