Gluten Free, High Protein & Fiber Breakfast Bake Recipe

I am excited to share this delicious gluten free, high protein & high fiber breakfast recipe with you. This meal keeps me full and satisfied for hours. It was such a gift years ago to learn how to properly fuel my body so I could lose 60lbs without feeling hungry and sustain that loss all of these years. I love helping my clients I work with learn how they can do this as well.


Here is everything I used to make this:

1 medium organic sweet potato (you need to bake it prior to using it in this recipe)

2 Organic Pasture raised eggs 

6 tablespoon of organic pasture raised egg whites

1 slice of bacon (no sugar added or nitrates)

1 ¼ cup of Shredded Cheese (shred from a block so you can avoid cellulose)

1/2 medium sized avocado 

2 cups of organic spinach

3 organic mini peppers sliced

1 tsp of melted organic coconut oil


Set the oven to 390 degrees and lets make this dish. I greased my loaf pan with organic coconut oil. Then I mash the sweet potato into the bottom of the pan, I pour the melted coconut oil on top, then whisk all the eggs together then pour over the top, I dice the spinach along with the peppers then add those on top followed by the one lsice of bacon I crumble and lastly the shredded cheese. I then bake for 22 minutes. 


Macronutrient breakdown for the exact ingredients/brands I used for this meal. MFP calculated it all to be 631 Calories, 42 grams of protein, 53 carbohydrates, 13 grams of fiber and 28 grams of fat. 


When I eat this exact meal I feel full and satisfied for hours, plus it’s so delicious I can not wait for you to let me know your thoughts when you try it.
