Healthy Shrimp Ceviche & Tortilla Chips

I am thrilled to share this recipe with you. It's great to bring to a summer gathering, to serve pool side on your boat or over a bed of lettuce for a meal. There are many ways to enjoy this dish. It makes a large dish too!
One thing I have learned on my wellness journey over a decade ago was even though getting 60lbs off my body felt amazing, what helped me feel even better was being mindful of the ingredients I consumed. I feel better when I am eating home versus out at a restaurant. Until I cleaned up my foods in my pantry, fridge and freezer with cleaner ingredients I began to realize how much the food and drinks I was consuming was affecting my mood, energy and body in general. It was eye opening because it was not just happening in my own life but my families life.
This recipe is so easy to make and was inspired by one of Lillie Eats & Tells Recipes. All you do is through these ingredients together and enjoy with my favorite healthy tortilla chips. Ingredients needed to make the shrimp ceviche:
1 lb. cooked wild caught shrimp chopped (boiled them in water and then squeezed lemon over them once chilled)
1 cup of organic corn
1 organic red onion diced
1 package of small tomatoes chopped
1 organic large cucumber diced
1 organic mango chopped
1 medium avocado chopped
1 cup organic cilantro chopped
2 limes & 1 lemon juiced
1/2 tsp of Redmond salt
Masa chips (hands down best tasting & healthiest chips you can find) to scoop this delicious shrimp ceviche
All you do is wash, chop and mix together. I do like to stick it back in the fridge to chill prior to serving. I hope you love this dish as much as we do!
