Acai Superfood Bowl


We love Acai bowls and if we can't get to Tres Palmas our favorite place to grab them, I finally learned how to make them at home. It took a couple tries because if you add to much liquid the acai smoothie mixture can become watery and you want it to have a thick texture, verses a watery one. So I learned less is more with liquid when attempting this recipe. Alright lets get to the ingredient list:

  • 1 packet of acai fruit (my favorite is from Trader Joe's)

  • 1/4 cup of fresh raspberries

  • 1/4 of fresh blueberries

  • 1 small banana

  • 1/3 cup of unsweetened coconut

  • 1 Tbs chia seeds

  • 1 packet of chocolate shakeology

  • 1 Tbs of all natural peanut butter

  • 1/3 cup of granola, I use original Purely Elizabeth Ancient grain granola

  • 3 Tbs of unsweetened almond milk

Directions:

I take a handful of ice, the 3 Tbs of unsweetened almond milk (you may need 1 more), packet of acai fruit (run under warm water in the packet & try to break into at least four pieces prior to adding it to the blender) and 1 packet of chocolate shakeology. Start blending in the blender until it's smooth and not chunky, you want the texture to be thick. Then you will need a spatula to scrape the mixture into a bowl. I place all the fruit on one side of the bowl, coconut in the middle and then the granola.I drizzle the peanut butter on top. You can add the chia seeds on top as well.

It's such a filling treat that everyone in our family enjoys! I hope you do too!
