Clean Guacamole Recipe

I am so excited to share this guacamole recipe with you all. I would love to take credit for creating my favorite recipe, but it is my husband who nailed this! After we went to Cabo for vacation and took a guacamole making class, he came back and made the most delicious recipe! We have made it so many times and his recipe is constantly getting rave reviews.
Ingredients:
4 Ripe avocados
1 fresh jalapeño
1 tsp. of Pink Himalayan salt
1/2 tsp of garlic powder
2 limes
1/2 red onion
1/2 bunch of fresh cilantro
2 roma tomatoes
3 garlic cloves
The process of how all of this will be made is key. We learned a couple things in Cabo that changed how we made guacamole. This is also a tool we use & makes the process so much easier. It is the OXO 3 in 1 Avocado tool & you can grab yours by clicking on the picture below.
So now here is the process of creating authentic guacamole. You want to grab a large bowl to place all the ingredients in. We make this prior to serving it right away so it doesn't have the opportunity to get brown on us & is served as fresh as possible. We use the OXO tool to slice the avocados in half, remove the pit and remove the meat of the avocado into the bowl. Then we dice the fresh jalapeño finely to add over the avocado. The Roma tomatoes will be deseeded, you will only add the meat of the tomato to the guacamole. If you add the seeds it will make the guacamole watery, which you don't want. You will finely chop the meat of the Roma tomatoes and then add to the bowl. Next finally dice the three garlic cloves to add to the mixture, followed by the red onion finely diced as well. Next you will wash the half of a bunch of fresh cilantro. You will not remove the leaves, you will dice the whole cilantro including the stems as finely as possible and then add to the bowl. Next squeeze the two fresh limes on top of the ingredients & sprinkle the pink Himalayan salt along with the garlic powder. Now it's time to mash and mix all the ingredients together. Depending how long to mix & mash is up to your liking. You can keep it thick & chunky or mash it up more for a smoother guacamole mixture. Now your guacamole is ready to be served with your favorite tortilla chips. We love Trader Joe's restaurant style chips that have a hint of lime to them or the Garden of Eden tori all chips.
