Simple Healthy Veggie Dinner

Tonight's dinner was so simple, quick and delicious that I couldn't wait to share it with you all. We all have those cray busy nights where it can be a struggle to get a healthy meal on the table quickly or you are so hungry you almost feel like you don't have it in you to wait for something to be cooked. That is why I am glad this turned out so well and I can share with you all. It was kid approved to which makes it even better.

Ingredients: 1 tbsp. of Olive oil 1 tsp. of Miso paste 1 large carrot 1 large zucchini 1/2 white onion 2 garlic cloves 1 large yellow squash 2 small or 1 large sweet potato 2 bags of Trader Joe's organic brown rice 1 package of Trader Joe's Thai Veggie burgers Drizzled with Sriracha tartar Sauce You can dice the veggies over the weekend to save prep time during the week. I did microwave the sweet potatoes for two minutes before removing the skin and dicing them up. I diced up all the veggies and garlic. I added the oil and miso paste to a wok. I blended the two of them and then added all the veggies. I cooked the rice and the veggie burgers on the stove. Everything was cooked in ten minutes. I placed the rice on the plate, then the veggies and the Thai burger on top, drizzled for Sriracha tarter sauce that I made from the book, I could Never Be Vegan by Kristy Turner.
