21 Day Fix Easy Chicken Tacos For Taco Tuesday


This recipe is so EASY & is such a HUGE hit with everyone in my family! There is no cooking chicken, either because I simply used a plain rotisserie chicken, removed the skin & shredded the chicken. Perfect healthy dish to serve on Taco Tuesday! Ingredients:
Taco seasoning Low sodium organic (purchased mine from Wegamsn or you can make your own seasoning using the Fixate cookbook: https://teambeachbody.com/shop/-/shopping/FixateCookbook?referringRepId=309254)
1 rotisserie plain chicken
1 green pepper
1 sweet onion
Black beans (no salt added or low sodium)
Shredded cheese
Salsa (I purchase mine fresh from a local Mexican restaurant)
Taco Shells (I use Garden of Eaten)
Serves 6 adults
Remove the skin from the chicken, place is pan with 3/4 cup of water on medium heat. Then add the taco seasoning. Mix it all together. Then dice the pepper & onion. Sauté with the chicken for 5 minutes. Set the oven to bake at 375.
Get a pan out & remove Taco shells from packaging. Fill the shells with the chicken, then a spoonful of black beans, 1 spoonful of salsa over the top & sprinkle cheese.
Line them up in the pan so they are sturdy and don't tip over. Place in the oven for 10 minutes or until the cheese is bubbly/melted.
Enjoy! You can use plain greek yogurt instead of sour cream & shredded lettuce as well! If you are following the 21 day fix: 1 red 1 blue 1 yellow
