Clean Eating 21 Day Fix Approved Chicken Noodle Soup


Two sick kids are home, which means it's time to whip up some homemade chicken soup. You are not going to find high sodium canned soup or chemical loaded store bought soup in this house. It's time to fuel these bodies with healthy foods, low in sodium that will help build up their immunity. If you are looking for a quick & simple homemade recipe then this is it. This will make 10 servings.
Ingredients:
  • 8 stalks of celery

  • 5 carrot sticks

  • 1 sweet onion

  • 5-6 garlic cloves

  • Italian parsley

  • 2 plain rotisserie chicken

  • 32 ounces of organic chicken broth low in sodium

  • 3 cups of water

  • 2 cans of no salt added diced tomatoes

  • 1 tablespoon of coconut oil or olive oil

  • Pasta is optional

  • Sea salt

  • Ground pepper

Pull the crock pot out if you have at least 4 hours, otherwise you can boil it all together on your stovetop much quicker. Dice up the onion and garlic, then sauté in the oil for four minutes with a dash of sea salt & ground pepper. Add the broth & water to the crock pot, then the garlic and onions after you sauté for 4 minutes. Dice the carrots & celery, then add to the crock pot. Grab the chicken, remove the skin and shred the chicken. Rinse both cans of tomatoes and add to the crockpot. Then add the parsley to the crock pot. If you want to add pasta you can prior to serving the soup.
Cook all ingredients in the crockpot for a minimum of 4 hours. This is enough to make two dinners for a family of five, you can freeze the other half for another dinner in a couple of weeks. If you are following the 21 Day fix you would count it as 1 red and 1 green, then if you add the pasta you need to account for 1 yellow. Enjoy this healthy chicken noodle soup to warm you on a cold day or nourish your body when you are feeling under the weather.
