Clean Eating And 21 Day Fix Approved Crock Pot Beef Stew

This is a great healthy fall time dinner. Takes less then ten minutes to throw together. When you walk threw the door from work your home will smell amazing.
So let's talk about what you need to make this dinner: * 1.5 pounds of beef (stew cut) * Beef broth (low sodium) * portabello mushrooms (1 container) * 2 garlic cloves (chop up) * rosemary * thyme * sea salt * ground pepper * 1 bag of carrots * 2-3 cups of butternut squash * 5 pieces of celery cut up * 1 onion cut up (white or yellow) * 2 cups of red potatoes * 1 can no salt added diced tomato
Pour all of the beef broth into the crock, then add chopped up garlic cloves. I then add all the vegetables, the beef, pour tomatoes on top, then add the sea salt, ground pepper, rosemary, and thyme.
I put the crock pot on low and cook for 8 hours. If you will be gone longer from work or for the day, then cook this through the night and then throw in the fridge in the morning. All you have to do is warm it up when you get home from work. This makes 6 servings for dinner. I serve with a side salad. If you are following the 21 day fix, one serving will count as 2 green, 1/2 yellow & 1 red. You can opt out the potatoes or just pick them out, if you don't have any yellows left for the day.
