A Fall Clean Eating Crockpot Chili Recipe

Football season is upon us and chili seems to be a popular dish to serve. Whether the game is on or not my family loves to eat chili any night of the week. My children also love to dip Xochitl chips in this chili recipe. This is such an easy recipe and can be quickly made before you leave for work or start your day.
To make this recipe here is what you will need:
  • 1 lb of extra lean ground turkey

  • 1/2 sweet onion finely chopped

  • 1 green pepper finely chopped

  • 2 cans of diced tomatoes (no salt added or low sodium)or 2 cups of fresh diced tomatoes

  • 1 can of black beans (low sodium or no salt added) rinsed

  • 2 cans of kidney beans (low sodium or no salt added) rinsed

  • 1 can of cannelloni beans (low sodium or no salt) rinsed

  • 1 can of shoepeg corn rinsed or fresh corn

  • 1 tsp minced garlic

  • 1 can or pureed pumpkin or 2 cans of tomato paste

  • 1 tbsp chili powder

  • 1/2 tsp of cumin

Place all the ingredients in the crockpot on low for 6 hours. You can serve with greek plain yogurt or natural sour cream. Shredded cheese is sure to please everyone as a topping too. Enjoy! Easily 21 day fix approved!
