Clean Eating Crock Pot Pork Carnitas Were On Our Menu Tonight (21 Day FIX And 21 Day Fix Extreme)
After eating out a little too much on vacation, you realize quickly nothing taste better than a fresh home cooked meal. With today being Easter and a lot of things to do, a crock pot meal seemed ideal. If you like spicy food, then you will love this. It had a ton of great seasoning. The Greek yogurt lime cilantro topping and fresh squeezed lime compliment the spicy rub. Honestly I would give this meal a ten, it was that good. If you are following the 21 Day Fix meal plan or the 21 Day fix Extreme plan, then this is a great recipe to try. I made a couple tweaks to this recipe that was given to me. I hope you enjoy it as much as we did!

Ingredients: 3 lbs. of Pork Loin 2 bay leafs 1 3/4 cup of water
To make the rub combine:
2 tbsp. of chili powder
2 tsp of cinnamon
1 tsp of ground coriander
1/2 tsp cloves
1 tsp onion powder
1 tsp garlic powder
1 tsp sea salt
1 tsp oregano
Directions:
Mix all spices together except the bay leaf in a bowl.
Rub down the entire pork loin with the spices and place in your slow cooker.
Add the bay leaf and water and cook on low for 6-8 hours. Keep an eye on the pork just to make sure the water doesn't absorb and it dries out. If you have to add more liquid please do.
Your pork should pull apart easily so you can shred it.
You can fill a red container with this for the 21 day fix!
​For the Carnitas you will need:
Corn Tortillas (if following the 21 day fix extreme, then omit these) cook at 350 for 8-10 minutes. Spray the corn tortillas with olive oil or coconut oil, then line cookie sheets with foil.
Black Beans (low sodium)
Romaine Lettuce chopped
Diced Tomatoes (if canned, no salt)
Diced Avocado
Shredded cheddar cheese
